I love that pies and tarts are so versatile. You can turn nearly any ingredient into a filling and enrobe it in a flaky crust and you have an amazing meal. I know making homemade dough can seem intimidating. I think this is because it requires  you to trust your instinct — to make little adjustments and changes based as you go — and trusting our gut is a sorely under-used skill. So I encourage you to try make a pie or a tart and get comfortable making dough. It will open up a whole world of recipes for you.
