I was raised as a vegetarian for part of my childhood and although I am an omnivore these days, my veggie-loving-roots are a fundamental part of me. I love cooking with the widest array of vegetables and fruits possible because they offer up a level of variety that isn’t found elsewhere. I also think that eating more produce and less meat in our daily/weekly diets is the single most powerful thing we can do to transform our health and the health of the planet.
